These PB2 peanut butter cookies have a fraction of the fat, sugar and calories in regular peanut butter cookies and melt in your mouth with peanut butter deliciousness. My kids love them, I love them, and my husband ate all of them…I need to make more! This recipe makes 22 cookies.
Ingredients
1 cup unsweetened applesauce
2 tsp vanilla extract
2 egg or ½ cup egg whites
Scant 1/4 tsp salt
¾ cup organic brown sugar or Stevia (I used stevia)
2 ½ cups PB2 or any powdered peanut butter
Preparation
1. Heat the oven to 350.
2. Line a cookie sheet with a baking mat or parchment paper or sprayed with nonstick spray on a baking sheet.
3. Combine everything except the PB2 in a food processor OR a large mixing bowl. Pulse to combine or stir well.
4. Add the PB2 and either pulse or stir well to combine.
5. Drop the cookies onto the sheet using either a 2 Tbs. cookie scoop or by generously rounded tablespoons.
6. Bake for about 12-15 minutes (depending on the baking sheet you use), or until the cookies are lightly browned on the bottom.
7. Cool completely before eating, store in the fridge for 1 week.
