I have made these before Christmas, and they are so good! They are a little more nutritious than some of other choices out their for Christmas baking. And even better they have added protein. If you love coconut as much as I do, you will love these! Makes 15 cookies, serving size is 1.
Ingredients
1/2 cup egg whites
1 1/4 tbsp. raw honey
1/8 cup Stevia
1/2 cup vanilla protein powder
1 cup unsweetened shredded coconut
Pinch of ground cinnamon
Preparation
Preheat oven to 200 degrees.
Place egg whites, stevia, and honey into a bowl and beat until frothy.
Add protein powder, cinnamon, and shredded coconut and stir until completely coated.
Set mixture aside for 5 minutes so that the liquid is well absorbed into the coconut.
Line a baking sheet with parchment paper.
Using a spoon place mounds spaced apart on baking sheet to make 15 macaroons.
Bake for 20 minutes, or until lightly browned.
