This Protein Packed Pumpkin Mug Cake is easy to make, less than 200 calories per serving and only takes a few minute in the microwave for moist, delicious cake! Makes 1 Serving.
Ingredients
Cake:
30 g. (1 scoop) Vanilla Protein Powder (I used VEGA Plant protein powder)
2 tbsp. Coconut Flour
1 1/2 tsp. Stevia (liquid sweetener)
1/4 tsp. baking powder
1/4 tsp. ground cinnamon
1/8 tsp. ground ginger
1/4 cup canned pumpkin puree
5 tbsp. egg whites
2 tbsp. unsweetened almond milk or milk of choice
1/4 tsp. vanilla extract
Toppings (optional):
2 tbs. unsweetened almond milk (vanilla flavored)
¼ scoop vanilla protein powder
2 tbsp. pumpkin puree
Preparation
Whisk together dry ingredients (through spices).
Mix in wet ingredients (through vanilla).
Lightly spray an oversize coffee mug (or small bowl) with cooking spray, and spoon batter in.
Microwave for 2:00-3:00 minutes.
Dump out cake onto a small plate to cool.
Meanwhile, combine unsweetened milk, pumpkin puree, and protein powder, and make the topping.
Smother cake with sauce.
