This low fat, high protein recipe can be used as a yummy snack. This month is all about the pumpkin right? I guarantee you that this Pumpkin Pie Protein Pudding recipe will satisfy any pumpkin craving you might have! Serves 1.
Ingredients
2/3 cup pumpkin puree
1 tsp. cinnamon
1 tbsp. PB2 (I used chocolate PB2)
1 scoop Vanilla Protein Powder (I use Plant Fusion protein powder)
Topping: 1 teaspoon cinnamon
Optional: 1 tbsp. cool whip
Preparation
1. Mix all ingredients together with a fork and add a tablespoon of cool whip ( I use the CocoWhip, from So Delicious).
2. You can chill in in the freezer for 10 minutes and enjoy!
