Warm and spicy pumpkin pancake, is another one of my favorites for my morning meal. I started making my normal pancake mix but wanted to have a different taste and this one worked out so well! I felt that some people may like this recipe as much as I did so I decided to add it, so let me know how you like it! Makes 1 serving.
Ingredients
½ cup oat flour (mix ½ cup oats in blender until flour like substance)
½ cup vanilla protein powder
1-1/2 cup unsweetened almond milk
1 tablespoon pumpkin pie spice
2 egg whites
1/2 teaspoon vanilla extract
Optional: Add berries as your topping!
Preparation
1. Whisk together all ingredients in a medium mixing bowl.
2. Spray non-stick spray on a frying pan/griddle and pour on your pancakes and cook until done.
3. Serve a stack of hot pancakes topped a tbsp. peanut butter and a side of 3 egg whites.
Serve warm and enjoy!
