I like to eat a protein rich breakfast but was SO sick of eating eggs. So I paired up a couple ingredients to trick myself to thinking I’m eating the real deal but actually saving myself from a ton of sugar and carbohydrates. Carbohydrates are good for you but I like to make sure I get enough protein after my workouts.
2/3 cup egg whites
1/2 scoop vanilla protein powder
3 packets of Truvia or Stevia
1 teaspoon of cinnamon
2 tablespoons unsweetened almond milk
Optional: 1 packet of Stevia/Truvia plus 1/2 teaspoon cinnamon for the topping.
Mix all ingredients together in a mixing bowl.
Spray a non-stick spray (or spread a thin layer of coconut oil) on a skillet.
Pour all ingredients in the skillet on medium heat.
Scramble the egg mixture.
When cooked, sprinkle the optional Stevia/Truvia and cinnamon on top.
