This tortilla pizza is super simple and easy to make on those busy nights! Or on a Friday or Saturday have pizza party and let your kiddos use their imagination and make their own pizza pie. This recipe can be changed depending your own desired flavor, this is one way to make it! The nutritional facts are based off this recipe, this recipe makes for 1 serving.
Ingredients
1 whole wheat tortilla or gluten-free tortilla
2 tbsp. pizza sauce
2 tbsp. black olive
2 tbsp. cherry tomatoes, sliced in half
1 cup spinach
½ cup extra-lean ground turkey, cooked
1/4 cup low-fat mozzarella cheese (dairy-free cheese, if needed)
Sprinkle of red peppers and Italian season and fresh basil
Preparation
1. Heat a large cast iron skillet or griddle on medium high to high heat. Place a WW tortilla or gluten free tortilla in the center of the skillet.
2. When the tortillas begins to puff up or form air bubbles, flip it and turn the heat down to medium low.
3. Pierce the air bubbles with a knife tip or the tines of a fork to deflate them a bit.
Sprinkle the top of the tortilla with a thin layer of mozzarella cheese. Once the cheese is about half-way melted, spoon on a thin layer of pizza sauce, using the back of the spoon to spread over the cheese and add the olives, tomatoes, spinach and turkey.
4. Once the edges of the tortilla are browning, indicating that the bottom of the tortilla is getting nice and brown, remove the pan from the heat.
5. Cover the top of the pan with a cover for about a minute or so, so the cheese on top can melt with the residual heat from the pan.
6. Sprinkle with fresh sliced basil, red peppers and Italian seasoning.
7. Remove to a plate and cut with a pizza cutting wheel or sharp knife.
Serve immediately and enjoy!
