Classy name for a delicious meal. My mom and I made this on Christmas Eve to bring along to the extended family’s Christmas. We had no idea what we were going to make but we had two sweet potatoes, left over turkey from the monstrous turkey my mom made for Christmas Eve dinner and lots of veggies. So that was what we put in there, it was super healthy and yummy, if you have left over turkey like we did or just want to make turkey for this recipe you will be really glad you did. So here it is:
Leftover Turkey Casserole
Ingredients:
1 lbs. turkey
1/4 cup gluten free flour (or flour of your choice)
2 cups of fresh chopped broccoli
1 1/4 cup gluten free chicken broth
1 teaspoon of minced garlic
1 teaspoon of onion powder
2 cups fresh spinach
1/4 cup unsweetened almond milk
6 egg whites
1 egg
2 sweet potatoes
1 cup chopped mushrooms
Directions:
Preheat oven at 450 degrees.
Spray a 9 X 13 cooking pan with non-stick spray.
Add cooked turkey in a bowl, then add the flour, chicken broth, chopped broccoli, chooped mushrooms, spinach, milk and stir together.
Steam the sweet potatoes till they are soft in the middle.
Beat the egg whites and the one egg together and add to the rest of the ingredients.
Once the sweet potatoes are finished, spoon out the insides of the potatoes into the turkey mixture.
Add the onion powder and minced garlic and mix all the ingredients together.
Pour the turkey mixture into the pan and bake for 30 minute or until golden brown at 450 degrees.
Serve warm and enjoy!
