So these I had to make before Christmas They are a little more nutritious than some of other choice I could have made. Even better they have added protein. If you love coconut as much as I do, you will love these!!
1/2 cup egg whites
1 1/4 Tbls. maple syrup
8 packets of Stevia
1 scoop vanilla protein powder
1 cup dried, unsweetened shredded coconut
Pinch of ground cinnamon
Directions
Preheat oven to 300° F. Whisk together egg whites, Stevia, and maple syrup in a medium-sized bowl.
Add protein powder and shredded coconut and stir until combined.
Use a tablespoon to scoop batter onto a cookie sheet lined with parchment paper.
Bake for 22 minutes.
Remove from oven and let cool before storage.
