This post will be a bunch of little things I put on my Facebook last week that I will just go a little more in detail with each of the fun idea’s I had for kids. These are all kid friendly, gluten and dairy free as well. These are my idea’s so you can also change it up as well and put your own little twist on it.
This is a snack that I have done for myself, but also it is fun idea for kids. I’m obsessed with hummus and I finally made a hummus that I like (took me a couple times of making), it has a little more flavor than a plain hummus and goes really well with veggies. So this is my recipe and I paired it up with cucumbers, this can also be a appetizer for a holiday party.
Cucumber Hummus Boats
2 cups canned chickpeas, drained and rinsed
1 7-oz. jar roasted red peppers, drained and chopped
1 clove garlic, chopped
1/3 cup tahini
1/4 cup lemon juice (from 1 large lemon)
3 tablespoons olive oil
1/4 teaspoon ground cumin
Salt and pepper
2 cucumbers
Directions:
Combine chickpeas, red peppers, garlic, tahini, lemon juice, olive oil, cumin, salt, pepper and 1 Tbsp. hot water in food processor and puree until smooth. Taste and adjust seasoning as desired.
Cut cucumbers into 1/2 -inch-thick slices and scoop out seeds with a small spoon or melon baller, leaving bottom intact to form a cup. Fill each cup with hummus and serve.
This is one I made yesterday and I have been thinking of different ways to make Christmas goodies with out using food coloring and for the sprinkles that we would normally put on our treats have the red, yellow and blue dye in it. So instead I used chopped pecans and shredded coconut, and I also used the dairy free Enjoy brand of Chocolate Chips. With this recipe you can use regular dark chocolate and whatever toppings you would like, mine are just options.
Chocolate Covered Pretzels
Ingredients:
1 or 2 cups gluten free pretzels (or pretzels of choice)
1/2 package of Enjoy Chocolate Chips (or Chocolate Chips of choice)
1/4 cup Unsweetened Almond Milk
1/4 cup shredded coconut
1/4 cup chopped pecans
Directions:
Make sure to have parchment paper on top of a baking sheet for the transfer of the chocolate pretzels.
Melt chocolate chips on the stove with 1/4 cup of unsweetened almond milk. Stir constantly, till melted.
Dip the pretzels as far as you want into the chocolate and put on the parchment paper.
* Very important, sprinkle the coconut and pecans right away, they will stick much better.
As soon as you finish your masterpiece, chill let the pretzels in the fridge for an hour on the baking sheet to ensure the chocolate hardens.
Banana Cane
This is super easy and fun for the little ones to put together themselves and then they can enjoy!
Ingredients:
1 Banana
5 small strawberries
Directions:
Cut the banana in little slices and cut the strawberries in half.
Let the child put the banana cane together and enjoy!
Last week I made some fun Christmas snacks for Adrianna and she love them, I don’t think she really know what they are yet but it is fun to teach her what a Christmas tree is out of food. She is obsessed with sugar snap peas, so this was right up her alley!
Christmas Snap Tree
Ingredients:
I used Rice Cheese for the star, and gluten- free cracker for the tree stump, and dried fruit for the ornaments! Ideas are endless! So fun and best is the fact that it is fun to make with the kids!
