I couldn’t believe how wonderful these were, I had to share and better yet they are less than 50 calories a bar!
I ended up using half of the recipe as I did with my lemon bars but instead of lemon I had used Raw Cacao Powder. This was pretty simple, I even made these while holding Adrianna (she needed to see what was going on) and making my Spicy Mexican Bake (that will be on my blog a couple days). So here it goes!
Ingredients:
For the Crust:
1/2 cup of almond flour (you can use flour of choice, I like almond because it is higher in protein)
2 scoop of Vanilla Protein Powder or ( if you want it to be even more richer taste use a Chocolate Protein)
10 packets of Truvia
1 cup of unsweetened applesauce (using applesauce the crust is a little light, but still taste great)
Chocolate Mint Filling:
4 teaspoon of Raw Cacao Powder ( I used the above powder)
5 packets of Truvia (You can use regular sugar, you would need 1/2 cup)
1/2 teaspoon of mint extract
1 teaspoon of vanilla extract
2/3 cup egg whites
1 egg
Directions:
Preheat oven at 350.
To make crust , mix in flour, and sugar, using a food processor or a blender to fully mix. Than add the 2 cups of applesauce and blend on high again till mixture is creamy.
Pour the crust mixture on a 9 X 9 non-stick spray pan, make sure to press the crust down evenly.
Place the crust in the oven for 20 minutes at 350.
While crust is baking, make the chocolate mint filling. Beat the 2/3 cup egg whites and 1 full egg in a blender (I used my ninja) until well blended.
Add vanilla, mint and Truvia, Mix well.
Add the raw cocoa powder and blend again until it is a creamy color.As soon as the crust is finished, remove from oven and reduce temperature to 300.
Immediately pour in the chocolate mint filling on the crust.
Bake completely, 30 minutes, cool and cut into 24 bars.
